Stamppot (English: Mash pot) is a traditional Dutch dish made from a combination of mashed potatoes with one or more vegetables or sometimes fruits.

These vegetable pairs traditionally include sauerkraut, endive, kale, spinach, turnip greens, or carrots and onions (a combination of the latter two known as hutspots in the Netherlands and as wortelstoemp in Belgium). Green vegetables such as endive can be left raw and added to the potatoes only at the stage of mashing. Some less common regional varieties of stamppots are made with fruit and potatoes, such as bluwe bliksem (blue lightning), made with pears, and hete bliksem ( hot lightning), made with apples. Pineapple can also be incorporated into sauerkraut or endive stamppot. In recent years, variations on traditional stamppots have become increasingly popular with people who add materials like rockets, leeks, beets, sweet potatoes, mushrooms and various other vegetables. Sometimes, the fish is used as an ingredient in the stamppot as well rather than serving it as a separate dish. Stamppot especially cold dish.

Stamppots usually served with sausages (smoked in Holland frequently, fries in Belgium more often), bacon julien, or boiled meat. Other foods include cheese, cucumber, peanuts or pickled onions.

Processed stamppots can be purchased from stores and supermarkets. It can also be ordered at a cafe-style restaurant, but stricter new regulations on permitted food at diner versus restaurants have limited the habit of offering simple dishes in many Belgian pubs.

The origin of stamppot is unknown, although legend links the hutspot findings to 1574. Using raw leafy vegetables rather than cooking them with potatoes has not been dated earlier than 1940.

There are two methods of preparing stamppot , the first being a more modern form:

  1. Stamppots are prepared by boiling vegetables and potatoes separately. When finished, the potatoes are added to the same pan with the vegetables and are all smoothed together. Rookworst , a type of smoked sausage, is the preferred piece of meat to add to a dish in Holland.
  2. Stamppot can also be created in a single pot. Potatoes and vegetables or fruit choices are placed in pots. Water is added, and the mixture is allowed to boil. After the vegetables are cooked and dried, some milk, butter and salt are added, and the vegetables are mashed together. Sometimes the same pot is used to warm the sausage as well, but they are not refined. An example often cooked with this method is hutspot with carrots and onions as vegetables.

Lardons ( spekjes ) are often added for flavoring. It is also common to make a small hole in the top of the mixture on a plate and fill it with a sauce, known in the Netherlands as a quiltje juice (small sauce hole).
