Health
Most pre-sliced ââmeat slices are higher in fat, nitrate, and sodium than those sliced ââto order, since larger surfaces are exposed to require a stronger preservative. As a result, processed meats significantly contribute to the incidence of heart disease and diabetes, even more than red meat.
A prospective study followed by 448,568 people across Europe showed a positive relationship between consumption of processed meat and death, due to cardiovascular disease and cancer. Similarly, a prospective study in the United States after half a million people concluded similar relationships with mortality and increased consumption of processed meats. The World Cancer Research Fund International guidelines on cancer prevention recommend to avoid all processed meats.
