H. Forman & amp; Son is a commercial salmon smoke house, located in London's East End on Fish Island, Hackney Wick. This is the UK's oldest steepest salmon and one of the oldest smoked salmon producers in the world.

History
Initial years
Harry (Aaron) Forman arrived in east London from Odessa in the early 20th century. He pursued his trade of curing fish by importing salmon in a saltwater bar from the Baltic. When discovering fresh Scottish salmon arrived in London at Billingsgate Fish Market.
Harry Forman started his business in Stepney, London. Harry's son, Louis Forman, took over the business and continued to run it until 1960 after his father's death. He moved the business to Ridley Road and Marcel Forman replaced him.
Recent history
The fourth-generation Forman owner, Lance Forman, joined the business in 1994. He oversaw the company's double in size in 1996, when the company expanded to a neighboring property in the Queen's Yard. The new and expanded plant suffered 60% damage from the fire in 1998 and the company continued to operate while rebuilding the building. In October 2000, the newly renovated factory was flooded under 3 feet of water when the river nearest the Lea River overflowed. The company moved the plant to Marshgate Lane, Stratford, completing the move in 2002.
London 2012 Olympic compulsory purchase order
In 2003, H. Forman & amp; Son learns from London's offer to host the Summer Olympics 2012. Companies must move following a Mandatory Purchase Order. The new plant belongs to Forman located on the proposed land to become the Olympic Stadium running track. The relocation was confirmed in July 2005 when London won an offer to host the 2012 Summer Olympics.
Lance Forman founded the Marshgate Lane Business Group, which works to ensure 284 businesses facing relocation are treated fairly during the mandatory purchase process. H. Forman & amp; Son was given two years to relocate his business by the Olympic Delivery Authority (ODA). The deal was struck with authorities in 2006 when Lance Forman was asked by ODA to resign from cross examination of LOCOG chairman Sebastian Coe at the Tribunal Land trial.
In the same year, the business identified a new site on Fish Island, Hackney Wick. The new premises are designed by architects Jones East 8 to resemble the shape of salmon, pink.
The mayor of London, Boris Johnson, officially opened a smoke house in 2009. The company headquarters is the nearest building (100m distance) to the stadium outside the Olympic Park.

The London Cure
The London Cure is H. Forman & amp; Men's signature smoking process; this is a dry drying process using only salt, no sugar, followed by a cold smoking procedure using a limited amount of smoke and controlled, now produced by frictionally burned oak. The fish was healed, carved (with a circular mechanical knife), filled and packed by hand.
Business Forman
H. Forman & amp; Son is also the parent company for four businesses that share its headquarters: Forman & amp; Field, Forman's restaurant in London, Forman's Fish Island, and Forman's Smokehouse Gallery.
- Forman & amp; The field was established in 2002. It is an online based arm of H. Forman & Son, who specializes in British food made to order and sourced from a small British manufacturer, and sells H. Forman & amp; Son fish.
- Forman's London Restaurant, serving H. Forman & amp; Son of smoked fish along with bespoke English dishes made by Executive Chef Lloyd Hardwick and a selection of English drinks. The restaurant hosts the BBC Celebrity MasterChef semi-finals in 2012.
- Forman Fish Island is a venue with a capacity of up to 1,000 people and includes a large event space overlooking the Olympic Park (also used as Forman's Smokehouse Gallery) and a rooftop terrace.
- H. Forman and Son's Smokehouse Gallery showcase artists every year. (Hackney Wick is home to the highest concentration of creative practitioners and artist studios in Europe.)
Ahead of the London 2012 Olympics, Lance Forman bought a land adjacent to the headquarters to pave the way for the temporary place of the Fish Island Riviera, which sees corporate and public festivities visiting Olympic visits during the game.
In 2013, the brand is extended to the US market through Formans USA.
