Eggs Benedict , also known informally as Eggs Benny , is a traditional American breakfast or brunch consisting of two parts of an English muffin topped with Canadian bacon, ham or sometimes bacon, boiled eggs, and hollandaise sauce. This dish was first popularized in New York City. Many variations on the basic recipe are presented.

Origin
There are conflicting accounts about the origin of Eggs Benedict.
Delmonico at the bottom of Manhattan says on his menu that "Eggs Benedict was first made in our oven in 1860." One former chef, Charles Ranhofer, also published a recipe for Egg ÃÆ' la Benedick in 1894.
In an interview recorded in the "Speaking City" column of The New Yorker in 1942, the year before his death, Lemuel Benedict, a retired Wall Street stockbroker, said he had traveled to the Waldorf Hotel in 1894 and, hoping to find a cure for drunk in the morning, ordering "buttered toast, boiled eggs, crispy bacon, and hollandaise whore". Oscar Tschirky, the maÃÆ'ître d'hÃÆ'Ã'tel, was very impressed with the dishes he put on the breakfast and lunch menu but replaced the ham for bacon and the grilled English muffins for toast.
Another, later claim to the creation of Eggs Benedict is circularly made by Edward P. Montgomery on behalf of Commodore E. C. Benedict. In 1967, Montgomery wrote to New York Times New York Times food columnist Craig Claiborne, who included a recipe he said had been received through his uncle, a friend of the commodity. The Commodore Benedict recipe - via Montgomery - varies greatly from the Ranhofer version, especially in the preparation of the hollandaise sauce - calling for the addition of a "hot and hard cooked egg and ham mixture".

Variations
Several varieties of eggs benedict exist.
- Eggs Blackstone replaces scented meat for ham and adds tomato slices.
- Eggs Blanchard replaces Bá chamel sauce for Hollandaise.
- The Florentine eggs replace the spinach for ham or add it underneath. An older version of the Florentine egg adds spinach to a boiled egg or shirred egg.
- Chesapeake eggs replace Maryland blue crab cakes instead of ham.
- Eggs Mornay replaces Mornay sauce (cheese) for Hollandaise.
- Egg Trivette adds Kreole mustard to Hollandaise and adds a Crayfish sprinkling.
- Egg Omar (also known as steak benedict) replaces small steaks instead of ham, and sometimes replaces hollandaise with bÃÆ' à © arnaise.
- Atlantic Eggs, Hemingway Eggs, or Eggs NorvÃÆ'à © gienne (also known as the Eggs of Royale and Eggs of Montreal in New Zealand) replaces salmon or smoked salmon for ham. These are common variations found in Australia, New Zealand, Canada and the United Kingdom, and in Kosher restaurants that can not serve bacon or other pork products. This is also known as "Egg Benjamin" in several restaurants in Canada.
- Huevos Benedictos replaces the slices of avocado and/or chorizo ââMexico for ham, and topped with salsa (like salsa roja or salsa brava) and sauce hollandaise.
- Eggs Hussarde replaces Holland rusks for English muffins and adds Bordelaise sauce.
- Irish Benedict replaces ham with corned beef or Irish bacon.
- Eggs Cochon, a variation of a New Orleans restaurant that replaces the ham with "pork" flakes (slow roasted pork chopped with its own juice) and an English muffin with a huge buttermilk biscuit.
