Red beans and rice are the traditionally-made traditional Louisiana Creole (not traditional Cajun cuisine) cuisine dishes on Monday with red beans, vegetables (peppers, onions and celery), spices (thyme, cayenne pepper, and bay leaf) and pork bones left over from Sunday dinner, cooked together slowly in a pan and served over rice. Meats like ham, sausage (most often andouille and Chaurice), and tasso ham are also often used on plates. Plates are custom - ham traditionally eat Sunday and Monday is a holiday. Peanut pitcher can sit on the stove and boil while the women are busy brushing clothes. This dish is now quite common throughout the Southeast. Similar dishes common in Latin American cuisine, including moros y cristianos and gallo pinto.

The red beans and rice are one of the few New Orleans style dishes that are served both in people's homes and in restaurants. Many neighborhood restaurants continue to offer it as a Monday lunch special, usually with side orders from smoked sausage or pork chunks. While Monday's holidays are mostly past, red beans remain a staple for big gatherings like Super Bowl and Mardi Gras parties. Indeed, red beans and rice are very much part of the New Orleans identity. Louis Armstrong's new Orleanian favorite food is red beans and rice - the musician will sign the letter "Your Red and Rich Peanut, Louis Armstrong".

Rajma Chawal's vegetarian dish is very similar (literally translated into red beans and rice), popular in North India. Red beans and rice are also staples in Central America, where it is known as "arroz con habichuelas". This dish is popular in Cuba, Puerto Rico, Dominica, Haiti, and Jamaican cuisine as well.

The food is very nutritious. Rice is rich in starch, a great source of energy. Rice also contains iron, vitamin B, and protein. Peanuts also contain good amounts of iron and more protein than rice.
