A debrecener (Hungarian: debreceni kolbÃÆ'¡sz , German: Debre (c) ziner , Italian: Salsiccia in Debrecen ) is a pork sausage with a subtle texture of uniform and reddish orange color, named after the Hungarian town of Debrecen. The sausages are heavily seasoned with peppers and other spices such as garlic, pepper and marjoram. Usually they contain small chunks of pork fat as well. They usually do not smoke or smoke lightly, and are sold in pairs at one end. Traditional cooking techniques call for Debreceni to be cut gradually and roasted, baked, or fried. The sausages tend to curl away from the slash, creating a series of coiled sausage coins.

Although originated in eastern Hungary, the sausage spread to and has become popular in almost every part of the Austro-Hungarian Empire (including Austria, northern Italy, Croatia, Slovenia, Czech Republic, Slovakia and western Ukraine), as well as in Germany and North America , and adopted into the cuisine. The Italians call it salsiccia in Debrecen; has been marketed as it is also in Canadian food shops, everyday in North America they are also referred to as "Hungarians".
